Grandma’s Chicken Noodle Soup Recipe

Growing up one of my Grandma’s speciality meals was her homemade chicken noodle soup.  There was nothing better than her bringing over a big plastic butter container that was filled with her famous soup. (Anyone else’s Grandma save all the plastic containers from food and use as Tupperware?!)

Ingredients

1 Whole Chicken

2 Medium Onions (1 diced, 1 cut in half)

1 Bag of Carrots (half diced, half whole)

1 Bag of Celery (half diced, half whole)

2 Sprigs of Thyme

2 Bay Leaves

Salt and Pepper

1 Tablespoon Garlic

1 Bag of Egg Noodles

**NOTE: If you don’t want to make your own chicken or stock you can use a store bought Rotisserie Chicken and Chicken Broth

Homemade Chicken Stock

1.)  Pat whole chicken dry with paper towel and remove giblets.  Season with Salt, Pepper, and Garlic

2.) Stuff Chicken with half of the Onion, Thyme, and Bay Leaves

3.)  Fill stock pot with warm water and place whole chicken, carrots, celery, and the rest of the onion in the pot

4.)  Bring to boil and simmer for 1 hour

5.)  Once chicken is fully cooked, remove from stock and let cool.  Remove all vegetables and bay leaves

Chicken Noodle Soup

1.)  Dice Carrots, Celery, and Onions

2.)  Place vegetables in Chicken Stock and bring to a simmer

3.)  Shred Chicken and add to stock

4.)  Add in Egg Noodles and salt and pepper to taste

5.)  Once Noodles are cooked remove soup from heat

Keto Friendly Recipes

Nick and I are starting off 2020 trying to stick to the low carb diet.  We both have some pounds to shed and we are both training for the half marathon in May!  Here are some of my favorite low carb recipes.

Egg Muffins

Ingredients

10 Eggs

1 Small Onion, Chopped

1 Cup of Spinach, Chopped

1 Jalapeno, Sliced

1/2 Cup of Sour Cream

1/2 Cup of Mozzarella Cheese, Grated

1/2 Cup of Cheddar Cheese, Grated

1 tsp. Garlic Powder

1 tsp. Salt

1 tsp. Pepper

12 Slices of Bacon, Optional

Directions

1.) Preheat oven to 350 Degrees

2.)  If using Bacon you can fry it stove top, or place on baking sheet and cook in oven at 350 Degrees for 20 minutes or until desired crispiness

3.)  Beat eggs in bowl, add in sour cream, chopped onion, and spinach.   Mix until combined

4.)  Add in grated mozzarella and cheddar cheese, salt, pepper, and garlic powder.  Stir mixture together

5.)  Grease muffin tins.  If using bacon wrap bacon slices around each spot in a circle

6.)  Pour egg mixture into each spot half way up

7.)  Place jalapeno slices on top of each muffin

8.)  Bake at 350 Degrees for 20 minutes ( You want them to be light and fluffy)

Keto Antipasto Salad

Ingredients

1 Can Artichokes, chopped

1 Jar Roasted Red Peppers, chopped

1 Small Red Onion, diced

1 Cup Mozzarella Cheese, diced

1 Cup Provolone Cheese, diced

1 Cup Genoa Salami, diced

1 Cup Sweet Sopressata, diced

1 TBSP. Basil, chopped

Dressing

1/4 Cup of Red Wine Vinegar

1/4 Cup of Olive or Avocado Oil

1 tsp. Italian Seasoning

Dash of Salt and Pepper

Directions

1.)  Chop all of the ingredients and mix into a large bowl

2.)  Add dressing and mix thoroughly

3.)  Place in fridge until ready to serve (great dish to make ahead)

**You can use any type of cheeses and meats based on taste!  You can also add olives, tomatoes, peppers, etc. if you would like

Bacon Wrapped Jalapeno Poppers

Ingredients
6 Jalapeno Peppers (quantity depends on the crowd)
1/2 Cup Cream Cheese
1/2 Cup Grated Sharp Cheddar Cheese
1/2 Cup Grated Monterey Jack Cheese
1 TBSP Garlic Powder
1 Package of Bacon
Directions
1.)  Slice jalapenos in half lengthwise and remove seeds (only if you want less heat)
2.)  Mix cream cheese, cheddar cheese, monterey jack cheese, and garlic powder together in a bowl
3.)  Fill each jalapeno with cream cheese mixture
4.)  Cut bacon in half and then wrap 1 piece of bacon around each jalapeno
5.)  Place on baking sheet and bake at 350 degrees for 20 minutes or until desired bacon crispiness

New Years Day Breakfast

New Years Day is usually a lazy day at home full of yummy food to close out the holiday season.  Here are some easy breakfast casseroles to the day before and pop in the oven in the morning!

Overnight French Toast

This Overnight French Toast from the Magnolia Table Cookbook is a family favorite!

Breakfast Sausage Casserole

Ingredients

Loaf of Hearty Bread (I used Italian)

1 lb. of Ground Sweet Italian Sausage

1 Onion, diced

1 Package of Mushrooms, diced

2 Cups of Shredded Cheddar Cheese

10 Eggs, beaten

4 Cups of Milk

1 tsp. Dry Mustard

1 tsp. Salt

1 tsp. Ground Black Pepper

1/2 tsp. Garlic Powder

1-2 Sprigs of Rosemary, Chopped

Directions

1.)  Brown Ground Sausage and diced Onions and Mushrooms over medium heat

2.)  Spray baking dish with Pam and layer with cubed Italian Bread

3.) Mix Eggs, Milk, Salt, Pepper, Dry Mustard, Garlic Powder, and Rosemary

4.)  Add Cheddar Cheese and Ground Sausage, Onion, and Mushrooms to Egg Mixture

5.)  Mix all together and pour over bread

6.)  Let chill overnight in fridge

7.)  Bake at 350 degrees for 45-60 minutes or until bubbling on top

Christmas Potpourri

Some of my greatest memories of the holidays growing up are actually the smells of Christmas.   My Mom always used to make potpourri on the stove top and I can distinctly remember that sweet smell that filled our house.  I created my own Christmas scent that fills our house during the holiday season.  Below is my recipe.  These also make great hostess or party favor gifts!

Potpourri Recipe

  • 1 Orange
  • 1 Cup Fresh Cranberries
  • 2-3 Sprigs of Pine or Rosemary
  • 1 Tablespoon Cloves
  • 2-4 Cinnamon Sticks

*Slice orange and place in a medium saucepan with cranberries, pine, cloves, cinnamon sticks, and 2 cups of water

*Simmer mixture and turn heat to low.  Your house will then smell amazing!

Holiday Party Foods

Mini Pumpkin Cheesecake Cups

Ingredients

1 8 oz. package of Cream Cheese, softened

1 15 oz. can of Pumpkin

1 package of Cheesecake Instant Pudding

1 can of Sweetened Condensed Milk

1 container of Cool Whip

3 Teaspoons Pumpkin Pie Spice

1 Cup of Graham Cracker Crumbs (you can buy the pre-crushed or crush your own with food processor)

4 Tablespoons Butter, melted

2 Tablespoons Sugar

2 Tablespoons Brown Sugar

Directions

1.)  Mix graham cracker crumbs, melted butter, sugar, and brown sugar together.  Place in the bottom of individual cups

2.)  Using a hand mixer beat cream cheese until creamy.  Add pumpkin, pudding, pumpkin pie spice, and sweetened condensed milk.  Beat with mixer until all ingredients are combined

3.)  Gently fold Cool Whip into pumpkin mixture with spatula.  Mix by hand until combined

4.)  Spoon pumpkin mixture into cups.  Set in refrigerator for at least an hour to set

5.)  Garnish top with additional Cool Whip and pumpkin pie spice.  Keep in refrigerator until ready to serve

Brie Bites

Ingredients

1 Can of Crescent Dough (You can use the rolls or sheet)

1 Wedge of Brie Cheese

1 Jar of Fig Spread (You can use any flavor, Sour Cherry, Cranberries, Honey, etc.)

1/4 Cup of Pecans Chopped

Directions

1.) Preheat oven to 350 Degrees

2.) Grease a mini muffin tin

3.)  Cut crescent dough into squares and place in muffin tins

4.)  Chop Brie into squares and place in muffin tin on top of crescent dough

5.)  Top Brie with fig spread and chopped pecans

6.) Bake at 350 Degrees for 10 minutes

Holiday Sangria

Most of you know by now I have a love for entertaining!  With every party I throw I like to have a themed drink!  This holiday sangria is super easy to put together especially for those last minute get togethers plus it is delicious!

Holiday Sangria Recipe

Ingredients

1 Bottle of Pinot Grigio (or other dry white wine)

1 Can of Sprite

4 Cups Apple Cider

1 Apple, diced

1 cup Cranberries

1.) Mix Wine, Sprite, and Apple Cider together and then add diced Apples and Cranberries

2.)  Chill until ready to serve
