Creamy Tomato Soup

Ina Garten’s Creamy Tomato Soup

Chicken Pot Pie

Ingredients

1 Medium Onion, Diced

4 Large Carrots, Diced

4 Celery Sticks, Diced

1 Small Package Mushrooms, Diced

2 Bone in Chicken Breasts or Store Bought Rotisserie Chicken

3 TBSP. Butter

1/4 Cup Flour

1 Cup Heavy Cream

1 1/2 Cups Chicken Broth

1 TBSP Thyme, Finely Chopped

1 TBSP Rosemary, Finely Chopped

Salt & Pepper to Taste

1 Sheet of Puff Pastry (Or you can use Pie Crust, Crescent Roll Sheet)

Directions

1.)  Preheat Oven to 350 Degrees

2.)  If you are cooking your chicken breasts season with salt, pepper, olive oil, thyme, and rosemary

3.)  Bake in oven at 350 degrees for 25 minutes

4.)  On stovetop melt butter, add in diced onion, carrots, and celery and cook 5 minutes until veggies are cooked down.  Add salt and pepper

5.)  Add mushrooms to veggie mixture and cook for 5 more minutes.  Season with thyme and rosemary

6.)  Mix in flour and stir pan until a paste forms.  Then add in heavy cream and chicken broth.  Cook about 10 minutes until mixture comes to a simmer

7.)  Once chicken is done and cools off, shred and add to veggie mixture

8.)  Pour ingredients into a baking dish and cover with pastry topping of choice.  I used puff pastry and put an egg wash on top for a nice sheen.

9.)  Bake at 350 degrees for 20-25 minutes (or until top is golden brown)

Chicken Tortilla Soup & Cornbread

Sapphire & Main’s Chicken Tortilla Soup

Jalapeno Cornbread

Ingredients

1 Cup Flour

1 Cup Cornmeal

2/3 Cup Sugar

1 Teaspoon Salt

3 1/2 Teaspoons Baking Powder

3 Tablespoons Honey

1 Egg

1 Cup Milk

1/3 Cup Vegetable Oil

3 Jalapenos (2 finely diced, and one sliced in rounds)

1 Small Onion, Diced

Directions

1.)  Preheat oven to 400 degrees

2.)  Dice 2 Jalapenos and Onion.  Slice 3rd Jalapeno into rounds

3.)  In a large bowl mix together Flour, Cornmeal, Sugar, Salt, and Baking Powder

4.)  Add in Egg, Milk, Honey, Vegetable Oil, Jalapenos, and Onions.  Mix until combined

5.)  Pour mixture into a greased baking dish and top with sliced Jalapenos

6.)  Bake at 400 Degrees for 20-25 minutes

**Once out of the oven I like to drizzle with additional Honey

Tortellini Soup

Ingredients

1 Onion

1 20 oz. Can of Diced Tomatoes

1 Bag of Fresh Spinach

1 Bag of Frozen Tortellini

4-6 Cups of Chicken Broth (depending on how much soup you want to make)

Salt and Pepper to taste

1 TBSP. Oregano

1 Cup of Parmesan Cheese

Directions

1.)  Dice onion and place in stock pot over medium heat.  Drizzle with olive oil

2.)  Once onions are translucent add in diced tomatoes and let simmer for 2-3 minutes

3.)  Now add in your broth and bring to a simmer.  Once soup is simmering add in your tortellini and continue to simmer

4.)  Chop spinach and add to soup

5.)  Add salt, pepper, and oregano.  Simmer for another 10 minutes

6.)  Serve with fresh grated parmesan cheese and hearty bread

 

Keto Antipasto Salad

Ingredients

1 Can Artichokes, chopped

1 Jar Roasted Red Peppers, chopped

1 Small Red Onion, diced

1 Cup Mozzarella Cheese, diced

1 Cup Provolone Cheese, diced

1 Cup Genoa Salami, diced

1 Cup Sweet Sopressata, diced

1 TBSP. Basil, chopped

Dressing

1/4 Cup of Red Wine Vinegar

1/4 Cup of Olive or Avocado Oil

1 tsp. Italian Seasoning

Dash of Salt and Pepper

Directions

1.)  Chop all of the ingredients and mix into a large bowl

2.)  Add dressing and mix thoroughly

3.)  Place in fridge until ready to serve (great dish to make ahead)

**You can use any type of cheeses and meats based on taste!  You can also add olives, tomatoes, peppers, etc. if you would like

Red, White, & Blue Fruit Cookies

Ingredients

1 Package Store Bought Sugar Cookie Dough

1 Container Cool Whip

1 8 oz. Block of Cream Cheese

1/4 Cup Powdered Sugar

2 tsp. Vanilla Extract

2 Cups Fruit of Choice (I used a mix of Strawberries, Blueberries, and Raspberries)

Directions 

1.)  Bake Sugar Cookies according to package and let cool

2.) Mix together Cream Cheese, Cool Whip, Powdered Sugar, and Vanilla using a hand mixer

3.)  Spread Icing on the Cookies and Decorate with Fruit of Choice

Mango Salsa

Ingredients

2 Mangos

1 Red Pepper

1 Green Pepper

2 Jalapenos

1 Small Red Onion

1 Small Bunch of Cilantro

Juice of 1 Lime

Pinch of Salt

Directions

1.) Chop mangos, red pepper, green pepper, jalapenos, red onion, and cilantro

2.)  Mix all together in a medium bowl

3.)  Juice the lime over the salsa mixture and add salt

4.)  Mix and Enjoy

**You can eat right away but I always refrigerate for at least an hour before serving

Overnight French Toast

This Overnight French Toast Recipe from the Magnolia Table Cookbook was a huge hit for my whole family!  It is the perfect dish for Easter Brunch or Mother’s Day breakfast in bed!

Roasted Potatoes

Ingredients

1 Bag of Fingerling Potatoes or 1/2 Bag of Yukon Gold Potatoes, Diced

1 Small Onion, Diced

1 Clove of Garlic, Chopped

1/2 Cup of Olive Oil

1-2 Sprigs of Rosemary, Chopped

1/2 Cup of Parmesan Cheese

Salt & Pepper to Taste

Directions

1.)  Dice Potatoes, Onion, and Garlic.  Place in Mixing Bowl

2.)  Chop Rosemary and place in bowl with Salt & Pepper, Olive Oil, and Parmesan Cheese

3.)  Mix all ingredients together and place on Baking Sheet lined with Foil

4.)  Bake @ 375 Degrees for 25-30 Minutes, or until Potatoes are golden brown

5.)  I like to add more Parmesan Cheese right after the Potatoes come out of the oven, just before serving

One Pot Pasta

Ingredients

1 Medium Onion, Diced

1 Clove Garlic, Diced

1 Package Sweet or Hot Italian Sausage

1 20 oz. Can Diced Tomatoes

1 1/2 Cup Chicken Broth

1 Box Pasta of Choice

1 Package Fresh Spinach, Chopped

Salt and Pepper to Taste

Directions

1.)  Saute Onion in Olive Oil in a pot on the stove top.  Add Garlic and Ground Sausage

2.)  Once Sausage is browned add in Diced Tomatoes and cook 1-2 minutes

3.)  Add in Chicken Broth and Pasta and bring to a simmer.  Cook 10-12 Minutes until Pasta is cooked

4.)  Add in chopped Spinach and cook 1-2 minutes.  Add Salt and Pepper to taste

5.)  Sprinkle with Parmesan Cheese and Enjoy!

Strawberry PoppySeed Salad

Ingredients

1 Cup Pecans

1/2 Cup of Sugar

1 Package of Salad of Choice (I used Organic Red Baby Butter Lettuce)

1 Pint of Strawberries Sliced

1 Cup of Goat Cheese (or you can use Feta)

Dressing Ingredients

1/3 Cup Apple Cider Vinegar

1/2 Cup of Sugar

1/2 Cup Olive Oil

1 tsp. Salt

1 1/2 TBSP Poppy Seeds

1 tsp. Dry Mustard

1 1/2 TBSP Minced Onion

Directions

1.) Create Candied Pecans by melting sugar on stove top and tossing with pecans.  Place on wax paper to cool

2.)  Slice Strawberries and Mince Onion

3.)  Whisk Apple Cider Vinegar, Sugar, Olive Oil, Salt, Poppy Seeds, Dry Mustard and Onion together to make dressing

4.)  Toss together Salad Greens, Strawberries, Candied Pecans, Goat Cheese, and Dressing

5.)  Place in refrigerator until ready to enjoy!

This fun and festive trail mix is perfect for Easter!  Plus it is a super easy snack for kids to help make!  You can also add anything you want to create your own signature mix!

1 cup Annie’s Bunny Grahams

1 cup Pretzels

1 cup Mini Marshmallows

1 cup M&M’s

1 cup  White Chocolate Chips

*Mix all ingredients together and enjoy!

*You can adjust the amount if you are making this snack for a large party!

1 Bag of Marshmallows

3 TBSP. Butter

2.)  Press into a 9×13 pan and let cool

3.)  Cut into squares

1 Box Cook & Serve Vanilla Pudding

1 Stick of Butter

1 Cup of Brown Sugar

2 tsp. Milk

2 tsp. Cinnamon

Nuts (Optional)

1.) Spray bunt pan with Pam

2.)  On stove top bring Butter, Pudding, Brown Sugar, Milk, and Cinnamon to a boil over medium heat

3.)  Pour hot mixture into bunt pan and place 15-20 frozen rolls around the pan

4.)  Cover with Cling Wrap that has been sprayed with Pam and let rise overnight

5.)  Bake @ 350 for 35-40 minutes (I typically cover the pan with foil until the last 10-15 minutes)

1 Bottle of Pinot Grigo (or other dry white wine)

1 Can of Sprite

4 Cups Apple Cider

1 Apple, diced

1 cup Cranberries

1.) Mix Wine, Sprite, and Apple Cider together and then add diced Apples and Cranberries

2.)  Chill until ready to serve

1 Can Pumpkin

1 Box Vanilla Instant Pudding

1 Container of Cool Whip

1 tsp. Pumpkin Pie Spice

1 tsp. Ground Nutmeg or Cinnamon

Directions

1.)  Mix together Pumpkin, Vanilla Pudding, Cool Whip, and Pumpkin Pie Spice with a mixer

2.)  Place in fridge for at least 1 hour to chill

3.)  Sprinkle ground Nutmeg or Cinnamon on top

4.)  Serve with Nilla Wafers, Graham Crackers, or Apple Slices

Ingredients

1 Bag Hard Pretzels

1 Packet of Italian Dressing Mix

1 Tablespoon Garlic Powder

1 Cup of Olive Oil

Directions

1.)  Smash pretzels into smaller pieces

2.)  Mix all ingredients together and place on baking sheet

3.)  Bake at 200 Degrees for 1 hour

1 Fresh Angel Food Cake, cubed into bite size pieces

1 Pint Blueberries

1 Container of Strawberries, sliced

1 Vanilla Pudding Mix, prepared according to package

1 Container of Cool Whip

Directions

1.)  Prepare vanilla pudding according to package and place in fridge to set

2.)  Slice strawberries and cut angel food cake into bite size pieces

3.)  Begin layering Trifle with angel food cake, pudding, cool whip, strawberries and blueberries.  Repeat layering until you end with Cool Whip on top.  Then create design with fruit on top

1 lb. of Ground Sweet Italian Sausage

1 Onion, diced

1 Package of Mushrooms, diced

2 Cups of Shredded Cheddar Cheese

10 Eggs, beaten

4 Cups of Milk

1 tsp. Dry Mustard

1 tsp. Salt

1 tsp. Ground Black Pepper

1/2 tsp. Garlic Powder

1-2 Sprigs of Rosemary, Chopped

1.)  Brown Ground Sausage and diced Onions and Mushrooms over medium heat

2.)  Spray baking dish with Pam and layer with cubed Italian Bread

3.) Mix Eggs, Milk, Salt, Pepper, Dry Mustard, Garlic Powder, and Rosemary

4.)  Add Cheddar Cheese and Ground Sausage, Onion, and Mushrooms to Egg Mixture

5.)  Mix all together and pour over bread

6.)  Let chill overnight in fridge

7.)  Bake at 350 degrees for 45-60 minutes or until bubbling on top
